How to make Homemade Leek and Potato Soup


Soups are one of the cheapest and easiest ways to eat and live on a budget. They are also ridiculously tasty. I once met someone who said soup is a pointless meal. I love soups of all varities. They are great to eat on the go as well or something that can be easily taken to work and ate quickly. Plus they are ridiculously filling. This Leek and Potato recipe is one I have tried for years. Whenever I'm feeling poor this is the meal I go to. It can be made for under £5 with extras left over. Amongst my friends its one of my most requested meals. Bon appetit.

You will need: 

  • 3 large Leeks chopped (3 pack- Tesco £1.80)
  • 1 Onion chopped (Large pack- Tesco £0.79)
  • 2 large Potatoes peeled and chopped (4 Jacket Potatoes- Tesco £1)
  • 2 Veg Stock Cubes (8 pack- Tesco £1)

Method: Add all ingredients into a large pan of boiling water and boil for 30 minutes on a low heat. Blend and add cream if you would like a creamier version.
